Ingredients: -

1) 1 cup Khoya (Mawa)
2) ¼ cup artisanal sugar
3) 2 tsp of A2 Desi Cow Ghee
4) ¼ tsp cardamom (elaichi) powder
5) A pinch of saffron strands (optional)
6) Chopped almonds, cashews for garnishing

Method: -

1. Cook the Khoya

● Add 2 tablespoons of A2 Desi Cow Ghee in a pan on low heat.
● Add the khoya to the pan and stir constantly, until the khoya softens and begins to release
ghee. This will take about 5-7 minutes.
● If using saffron, soak them in warm milk and add it to the khoya mixture. Your modaks will have a rich aroma and golden color.

2. Add Natural Sweetener

● After the khoya is cooked, mix in the powdered artisanal sugar.
● Stir continuously for another 4-5 minutes on low heat until the sugar melts and combines with the khoya. The mixture will become thick.

3. Enhance the Flavor of Modak Mixture

● Add the cardamom powder to the mixture. This will give the modaks a delicious aroma and enhance their flavor.
● For a crunchy texture, add chopped nuts (pistachios, cashews, and almonds) or save them for a garnish later.

4. Shape the Modaks

● Allow the khoya mixture to get cool, just enough to handle comfortably.
● To prevent sticking, grease your hands with a little A2 Desi Cow Ghee.
● Take small portions and shape them into modaks.
● Use your hands for a traditional shape or modak molds for a uniform shape.
● Press the mixture firmly into the mold and then carefully remove it from the mold.

5. Serve:

Let the modaks cool and serve them at room temperature. For an added taste and touch of elegance, you can garnish the modaks with chopped nuts or more saffron strands.

Storage:

Store these modaks in an airtight container for up to 2 days or keep refrigerated for up to a week. On the auspicious day of Ganesh Chaturthi, make your indulgence in sweet delights healthier with traditionally made A2 Cow Ghee and unrefined artisanal sugar ensuring richness and nutrition in every bite.
